BARREL-AGED BARLEY WINE

• CHAPTER 2

  So closes our second chapter… For Chapter 2 we have lovingly barrel-aged our Now & Then Barley Wine in Pedro Ximenez sherry casks. This 11.9% beer is wildly complex, with all sorts of malt goodness going on. It has big notes of raisin, dried fruit and caramel with underlying notes of coconut, vanilla and oak. It is full-bodied and luscious and chewy and is tasting incredible right now, but like our Chapter 1 beers it will continue to age gracefully for years to come. • CLOUDBURST — TART LEMON AND BLUEBERRY ALE

  No one can deny it’s been a challenging year. The global pandemic burst upon us like a sudden downpour a year ago, and it’s barely let up since. Cloudburst Tart Blueberry and Lemon Ale is released to celebrate International Women’s Day 2021. While COVID restrictions meant we couldn't bring the women of Cabin together to brew the beer, they decided the style, flavour profile and name and put our brew team to work. Cloudburst uses a hop blend provided as part of the Pink Boot Society initiative, which strives to improve gender diversity in the brewing industry. A portion of Cloudburst sales will go to the Pink Boots Society. The sweet fruitiness of the blueberries and vanilla in this easy-drinking sour are balanced with the underlying acidity of lemons, while lactose adds creaminess. Think of it as a pie in a pint glass 🥧. This year’s IWD theme is Choose to Challenge and we invite you to raise a glass of Cloudburst high to show you’re in.   Retrospectrum Pale Ale is easy enough to drink every day, yet complex enough to challenge your taste buds every time. Perfectly balanced with a complex malt body, our hop-forward take on the classic American Pale Ale is exploding with tropical fruit and citrus aromas and flavours, thanks to generous late additions of Citra and Amarillo hops. MEXICAN HOT CHOCOLATE STOUT Say hello to Luna & Fuego’s little cousin… Just like our barrel-aged Luna & Fuego, we started with a whopping imperial stout with cocoa, cinnamon and vanilla, then spiked it with a trio of chilies – sweet ancho, tangy guajillo and smoky chipotle. We’ve transferred a bunch of this beer to tequila barrels for a long sleep (see you in winter Luna & Fuego V2!) but for now you are in good company with Fuego - it’s unoaked, unaged, all sorts of fun and ready to drink now. The beer pours a thick, viscous black. The vanilla and cinnamon lend notes of horchata, while the cocoa and chili marry to create a decadently sweet and lingering spicy flavour.   PAPAYA KETTLE SOUR Hi-diddly-ho frienderinos! There is nothing better than great neighbours, right? In celebration of YYC Neighbour Day 2021, Cabin Brewing Company and Born Colorado Brewing collaborated on TWO special Neighbour Day beers that are designed to be mixed and matched with each other. We both started with a summer-crushing kettle sour base, sprinkled a little lactose for sweetness, then bombarded it with fruit. Born Colorado’s version has blood orange and grapefruit, while Cabin’s version has boatloads of papaya. On their own they are delicious – when blended and drank as a pair, they are next-level awesome! FLAVOUR PROFILE: Fruity & Tart HOPS: Magnum ABV: 5.7 IBU: 10

• ABBOT

  We joined forces with the most wonderful guys and gals at Banded Peak Brewing to create the most wonderful of winter beers - a dark, luscious Belgian Dubbel called Abbot. This Trappist-style ale boasts dark rich plum and dried fruit notes, with a spicy yeast undertone. It has a wonderful malt complexity that really is quite heavenly. It's perfect for sipping on a cold day and pairs beautifully with rich, slow-cooked meats and stews. STYLE: Dubbel FLAVOUR PROFILE: Spicy fruit and malt ABV: 7.8% IBU: 40

  HOPPED WHEAT ALE Just in time to toast the 153rd birthday of the place we call home, we offer to you Dominion Daze - a hopped wheat ale that is exploding with tropical notes from a federation-sized payload of Azacca, Galaxy and Vic Secret hops. At 5% it comes ready-to-crush for those all day long celebrations we know and love. We went with six-packs in the 355ml format for this beer, because “grabbin’ a fourer” just doesn’t sound right. And best of all? We’ve engineered two maple leaf stickers on every can label that you can peel off and use to express your patriotic fervour. Slap them on anything and everything! That’s 12 stickers with every sixer. We’re not sure Canada can handle this much patriotism on one six-pack but by heck, we’re going to give it a good old Canadian try!   TART NEIPA WITH PINEAPPLE & GUAVA 87 Steps is a luscious, full-bodied NEIPA that is laden with guava and pineapple, with a nice tart finish that keeps all that tropical craziness in check. This beer (brewed for YYC Neighbour Day 2020) is made to be shared; with the couple over the fence you’ve only said hello to; with the new family that just moved in; with your friends a few blocks over who are now like family. 87 Steps is the distance between Born Colorado Brewing and Cabin, in Calgary’s Manchester brewing area. We are neighbours. We are friends. We share a love of community and making great beer.   POMEGRANATE CHERRY SOUR Equinox tastes like the changing of the days. It pours the most gentle orange-pink hue, like a clear fall sunset. The pomegranate-cherry one-two punch lends a melange of plump ripe fruitiness, with very light underlying cooking spice notes and a woody, winey aroma - akin to a delicate rose wine.   AUSTRALIAN PILSNER Galaxy is the shining star of Aussie’s stellar hop lineup, with bright tropical fruit notes of passionfruit, citrus and peach. If Galaxy hops grew in your backyard, you’d throw them at everything too. It’s one of our personal faves. Our Australian pilsner, hopped exclusively with Galaxy, is made for drinking in the sun. Light. Bright. Crisp. Refreshing. Delicate. And an aroma that keeps on going, like the vast expanse of Australia’s land and sea. Get this one down ya, mate. It’s a beauty.   AUSTRALIAN HAZY IPA Close your eyes and dream of a land so vast and great and rich in culture you can lose yourself in it for weeks at a time. The Dreamtime is the foundation of Aboriginal religion and culture in Australia. It is the story of events that have happened, how the universe came to be, how human beings were created and how their Creator intended for humans to function within the world as they knew it. For our Australian-hopped hazy IPA, The Dreaming, we leaned into the ethereal qualities of this mystical land. Galaxy, Enigma and Vic Secret hops have been layered in tropical abundance, behind a smooth and full-bodied malt base. Unlike most hazy beers, we used no wheat and oats - just 2-row malt, flaked barley and victory malt. And it’s just how it was meant to be. STYLE: NEIPA FLAVOUR PROFILE: A tropical hopnado HOPS: Galaxy, Vic Secret, Enigma ABV: 6.7% IBU: 35

• TRIPLE THREAT

  HAZY IPA We’ve thrown three amazing hops - Sabro, Galaxy and Nelson Sauvin - into one amazing beer. Triple Threat Hazy IPA is the result of someone asking the three Cabin founders during an online QnA what their favourite hop varietal was. The three hops we came up with sounded so dang good as a combo, we couldn’t NOT make a beer with them! This is our biggest, smoothest, most aromatic hazy yet - and at 8.5%, it fits the bill as a true hop monster.   JAPANESE RICE LAGER For our second lager we wanted to make something different. Something light and crisp, yet floral and intriguing. A glorious lager to welcome in the brighter, lighter days. Something that epitomizes zen-like calm. Zen Garden uses 100% pilsner malt from Alberta’s Origin Malting with fragrant jasmine rice added for complexity and flavour. It’s the palest of straw in colour, with slightly floral and light bready aromas. It has a crisp, clean flavour with some nuttiness on the finish from the rice. It finishes dry and crisp.
